Once you are familiar with the Flair NEO Flex or Classic, and want complete control over your espresso, this pressure gauge kit is highly recommended.
The kit includes a stainless steel plunger and a pressure gauge, which you can rotate according to your desired viewing angle. With a timer and this pressure gauge you have ultimate control over your shot. The bottomless portafilter is also highly recommended.
We recommend starting your shot with a 10 second pre-infusion between 1-2 bar. It is normal if you already see a drop appear. Then you can build up pressure to 6 to 9 bar, try to maintain a flow of about 1 gram per second. If you have ground too coarsely, you may have to build up a little less pressure. Towards the end of your shot you can slowly release pressure, and try to be ready for around 1 minute.
These are just rules of thumb, the 'correct' recipe will depend on which beans you are using, how hot your brew chamber and water is, how fine you have ground, etc. But this Pressure Gauge Kit will help you fine-tune your recipe and get consistent to put shots.
