Adelson's property, Sitio Ribeiro, is at an altutide of between 1080 and 1200 masl. Temperatures in this area can drop below freezing in winter, making coffee farming very challenging.
He uses water from springs in the middle of a virgin forest for all of his processing, which is both incredibly clean and often very cold water. All of this creates cooler and slower fermentations that often have very interesting results in the cup.
